Cobie Brown: Wild Honey from the Fifth Month—Nature's Gift
Cobie Brown's unique wild honey is made from nectar collected by worker bees from a range of forest-specific plants. In contrast to nurtured honey, wild honey is rich in nutrients and has a distinct pleasant scent. The fifth month (usually between April and May) is the dry season, which results in a honeycomb rich in concentrated honey that is free of rainwater pollution. Fifth-month honey can only be obtained once per year. Forest fires are widespread during this time of year due to the hot and dry weather, which frequently damages beehives. Harvesting honey during this month reduces disturbance to the bees and provides Thai farmers with additional revenue while also motivating them to monitor for forest fires. With such high nutritional value, ingesting just one tablespoon per day is perfect for health maintenance, baking, or even medical uses.
