Cobie Brown: Wild Honey from the Fifth Month—Nature's Gift

Cobie Brown's unique wild honey is made from nectar collected by worker bees from a range of forest-specific plants. In contrast to nurtured honey, wild honey is rich in nutrients and has a distinct pleasant scent. The fifth month (usually between April and May) is the dry season, which results in a honeycomb rich in concentrated honey that is free of rainwater pollution. Fifth-month honey can only be obtained once per year. Forest fires are widespread during this time of year due to the hot and dry weather, which frequently damages beehives. Harvesting honey during this month reduces disturbance to the bees and provides Thai farmers with additional revenue while also motivating them to monitor for forest fires. With such high nutritional value, ingesting just one tablespoon per day is perfect for health maintenance, baking, or even medical uses.

Our wildflower honey comes in three varieties:

• Northern Wild Flower Honey - Classic One: This dark amber honey is made from several flower pollens, including Dok Jaw Law and Dok Siew, giving it a deep, authoritative sweetness.
• Western Wild Flower Honey - Amory: This honey has a brown color that stays steady regardless of temperature. It has the fragrant scent of Dok Ket and provides a pleasant, smooth sweetness.
• Northeastern Wild Flower Honey - Moonlight: This golden yellow honey darkens with time and is made from a variety of flower pollens such as Nontri Pa, Tao Khan Lek, and Pradu. It has a gentle scent and a balanced sweetness that is neither too intense nor too light.

Things to Know Before Buying:

1. Our honey meets all manufacturing standards (it is heated and steamed, resulting in a darker color and thicker consistency).
2. Shelf life: Classic One (3 years), Moonlight, and Amory (2 years).
3. If undisturbed: 3.1. Due to the glucose concentration in that particular batch, the honey may separate color (darker at the top of the container and lighter to clear at the bottom). 3.2. Because Cobie Brown's honey is chosen for its distinct aroma, it contains more pollen than other varieties, making it more susceptible to pollen streaks. The makers stated that this does not indicate spoiling; the flavor, scent, and color remain same, with the exception of edible pollen crystallization.

Cobie Brown Admin is open every day from 9:00 a.m. to 6:00 p.m., except for public holidays.

Products go out every Monday through Friday, excluding Saturdays, Sundays, and public holidays. Order cut-off periods vary depending on each shipping company's daily schedule.
